The global sugar alcohols market is projected to witness significant growth during the forecast period, exhibiting a CAGR of 6.3%. The market was estimated to be USD 3,602.68 million in 2021 and is expected to reach a value of USD 6,198.03 million by the end of the forecast period (2022-2030).
Based on type, the sorbitol segment accounted for a market share of 25.7% in 2021 and is expected to grow a CAGR of 6.7% during the upcoming years. This is mainly owing to the wide usage of sorbitol in various applications such as pharmaceutical, cosmetics and food industry as a sweetener or humectant. Sorbitol is a tablet diluent used in wet granulation or dry compression formulations for medicinal uses. Due to its sweet flavor, it is frequently employed in chewable tablets, and it serves as a gelatin plasticizer in capsule formulations. Sorbitol is used as a stabilizer for medication, vitamin, and antacid suspensions as well as sugar-free liquid solutions. Crystallization around bottle lids is avoided when it is used in syrups. Additionally utilized in topical and injectable preparations, sorbitol has a medical application as an osmotic laxative.
Based on source, the fruits segment accounted for a market share of 25.6% in 2021. This is mainly owing to the wide extraction of sugar alcohols from various fruits and vegetables such as pineapples, olives, asparagus, sweet potatoes and carrots, mushrooms, cereals and many more. Mannitol usually occurs in some fruits such as asparagus, pineapples, olives, sweet potatoes, and carrots. It is taken from seaweed and used in the production of food. Mannitol has 50–70% of the relative sweetness of sugars. However, mannitol stays in the intestines for a long time, resulting in bloating and diarrhea.
Based on the form, the powder segment accounted for a market share of 63.9% in 2021 and is expected to exhibit a CAGR of 6.4% during the forecast period owing to wide usage of powder form in beverages coupled with the increased inclination of consumers towards low-sugar products. For instance, according to Wantstats analysis, in the UK, about 45% of consumers regard honey to be acceptable in foods and beverages, while only 21% approve of artificial sweeteners. At 29%, the level of acceptance for sugar in fruit juices is relatively high and ranks on par with that of plant-based sweeteners. White sugar is preferred by 26% of consumers, whereas 27% of consumers choose cane sugar.
Based on application, the bakery products segment accounted for a market share of 41.9% in 2021 and is expected to exhibit a CAGR of 6.7% during the forecast period owing to the growing sales of baked products across the North America region. For instance, according to the British American Association, the USD 423 billion economic effect of baked products produced and sold in the U.S. around USD 3 billion is made by retail bakeries each year, and USD 31 billion is sold by industrial bakeries. However, due to the growing price of wheat and sugar, profits are not exceptionally significant. When costs rise, bakeries are sometimes unable to pass those costs along to customers by raising pricing. 65 percent of bakeries employ fewer than ten people, 44 percent have one to four, and most small businesses have just one location. Overall, the baking sector supports close to 800,000 jobs and generates more than USD 44 billion in direct compensation.
Furthermore, the increasing demand for low-calorie food products due to rising health concerns and obesity issues are some of the vital factors contributing to its market growth. For instance, the American Diabetes Association estimates that 37.3 million Americans, or 11.3% of the population, had diabetes in 2019. Type 1 diabetes affects almost 1.9 million Americans, including about 244,000 children and teenagers. Furthermore, according to the Ministry of Health and Family Welfare, In India, there are 74.2 million diabetics between the ages of 20 and 79. But the Department of Health & Family Welfare, Government of India, offers technical and financial support to the States/UTs under the National Programme for Prevention and Control of Cancer, Diabetes, Cardiovascular Diseases, and Stroke (NPCDCS), a part of the National Health Mission, based on the proposals received from the States/UTs and subject to the resource envelope. (NHM). The program focuses on enhancing infrastructure, developing human resources, promoting health, and raising awareness for NCD prevention, early diagnosis, management, and referral to a suitable level of healthcare facility for treatment.
Besides this, the growing demand for sugar alcohols in the pharmaceutical and food and beverage industry is another factor contributing to its market growth. For example, pharmaceutical companies frequently utilize wet granulation to create oral solid dose forms. Mannitol is being used more frequently as a pharmaceutical binder in these formulations due to its many advantageous properties. Despite being excellent for fluidized-bed granulation and wet granulation in organic solvents, standard crystallized mannitol in -polymorphic form frequently lacks sufficient binding and tableting properties for use with high/low-shear wet granulation processes. Apart from this, increasing research and development activities to produce new sugar alcohols with improved properties and applications may serve as an opportunity for market growth. However, the limited availability of raw materials and high production costs of sugar alcohols may restrain its market growth.

View Subscription PlansSugar alcohols are chemical molecules that are primarily formed from sugars and belong to the class of polyols. They are also known as polyhydric alcohols, polyalcohols, alditols, or glycitols. Sorbitol, mannitol, xylitol, isomalt, and hydrogenated starch hydrolysates are examples of sugar alcohols that are frequently included in food products. Sugar alcohols are derived from plant materials like fruits and berries. These plant items undergo a chemical transformation that changes the carbohydrate content. Due to their poor absorption and possible mild laxative effects, these sugar substitutes have a few calories less per serving than table sugar (sucrose). Despite their "sugar free" or "no sugar added" labels, many so-called "dietetic" items contain sugar alcohols. It's a common misconception among diabetics that meals marked "sugar free" or "no sugar added" won't affect their blood sugar levels. An individual entire meal plan must consider the calories and carbohydrate content of foods that contain these sugar alcohols because it is carbohydrates that cause blood glucose levels to rise. Because many people frequently eat meals that are "sugar free" or "no sugar added," their blood sugar levels may be noticeably increased.
Apart from this, the wide usage of mannitol in various application such as food and beverages, pharmaceutical and many more is likely to propel its market growth. For example, during cardiopulmonary bypass, mannitol is frequently utilized in the circuit prime of a heart-lung machine. While the patient is on bypass, the presence of mannitol protects renal function during periods of low blood flow and pressure. The remedy avoids endothelial cell enlargement in the kidney, which may otherwise have decreased blood flow and caused cell injury. Because mannitol has a lower glycemic index than sucrose and hence elevates blood sugar levels less than sucrose, it is used as a sweetener in chewing gum and as a sweetener for diabetics. Despite having a greater heat solution than most sugar alcohols, mannitol has a relatively low solubility, which lessens the cooling sensation typically associated with mint-flavored candies and gum. However, mannitol produces a significant cooling impact when it is fully dissolved in a product. It also has very low hygroscopicity, picking up water from the air only when the humidity is 98% or higher. Because of this, mannitol is frequently used as a component in candies and chewing gum. It is particularly effective as a covering for hard candies, dried fruits, and chewing gums.

In recent years, there has been a significant increase in demand for low-calorie food products due to rising health concerns and obesity issues. With an increasing number of people looking to adopt healthier lifestyles and maintain a balanced diet, low-calorie foods have become a popular choice for consumers. The World Health Organization (WHO) defines obesity as a medical condition in which excess body fat accumulates to the extent that it may have a negative effect on health. The prevalence of obesity has been increasing globally, with at least 2.8 million people dying each year as a result of being overweight or obese. This has led to an increased focus on healthy eating habits and the need for low-calorie food products. Furthermore, the COVID-19 pandemic has also contributed to the growing demand for low-calorie food products, as people have become more health-conscious and focused on building their immunity. In a survey conducted by the International Food Information Council (IFIC), 85% of American consumers reported that they have changed their food habits to improve their health since the pandemic began.
The demand for low-calorie food products is being driven by several factors, including government initiatives promoting healthy eating, a shift towards healthier lifestyles, and an increase in the number of people suffering from lifestyle-related diseases such as diabetes and cardiovascular disease. Consumers are increasingly seeking out low-calorie alternatives to their favorite foods, including snacks, beverages, and processed foods. Manufacturers of low-calorie food products are responding to this demand by introducing new products, reformulating existing products, and marketing their products as healthy and nutritious. For example, Bai Drinks has introduced a range of low-calorie beverages, including erythritol sugar alcohols. The increasing demand for low-calorie food products is a response to rising health concerns and obesity issues. The market for low-calorie food products is expected to continue growing as consumers seek out healthier options and manufacturers respond with new and innovative products.
Sugar alcohols is a type of low-calorie sweetener that is widely used in the food and beverage industry. They are commonly used as a replacement for sugar due to their lower calorie content and reduced impact on blood sugar levels. However, traditional sugar alcohols such as xylitol, sorbitol, and erythritol have limitations in terms of taste, solubility, and digestibility, which has led to an increased focus on research and development activities for the production of new sugar alcohols with improved properties and applications. To meet the demand for new and improved sugar alcohols, there has been a significant increase in research and development activities in this field. Researchers are focused on developing sugar alcohols with improved taste, solubility, and digestibility, as well as exploring new applications for these ingredients.
The production of new sugar alcohols is mainly achieved through chemical synthesis and biotechnology approaches. Chemical synthesis involves the modification of existing sugar alcohols or the synthesis of new sugar alcohols from renewable resources. Biotechnology approaches, on the other hand, use microbial fermentation to produce new sugar alcohols from renewable resources such as plant biomass, agricultural waste, and industrial byproducts.
One of the most promising biotechnology approaches for producing new sugar alcohols is metabolic engineering, which involves modifying the metabolic pathways of microorganisms to produce novel sugar alcohols with desired properties. For example, researchers have successfully engineered Yarrowia lipolytica to produce new sugar alcohols such as erythritol and d-threitol, which have better solubility and taste than traditional sugar alcohols.
Another approach that researchers are taking is to modify the chemical structure of existing sugar alcohols to improve their properties. Another approach that researchers are taking is to explore new sources of sugar alcohols. One example of sugar alcohols is allulose, which has gained approval from the US Food and Drug Administration (FDA) as a safe and effective sweetener. Allulose has a similar taste to traditional sugar but with only 70% of the sweetness and significantly fewer calories. It also has a lower glycemic index, making it a suitable option for those with diabetes or those trying to manage their blood sugar levels. Research and development activities for new sugar alcohols are being conducted by both academic institutions and private companies. Other companies, such as Cargill and Roquette, are also investing in research and development activities for new sugar alcohols.
Consumption of high amounts of sugar alcohols can lead to adverse effects on consumers' health. Sugar alcohols are a type of sweetener that is found in many processed food and drinks. They are often used as a substitute for sugar, but they can cause gastrointestinal problems such as bloating, diarrhea, and gases when consumed in large amounts. One reason sugar alcohols can cause gastrointestinal problems is that they are not completely absorbed by the body. Unlike regular sugar, which is absorbed in the small intestine and converted into glucose, sugar alcohols are only partially absorbed and pass into the large intestine, where they can be fermented by bacteria. This fermentation process produces gas, which can lead to bloating, cramping, and flatulence.
In addition to causing gastrointestinal problems, consuming high amounts of sugar alcohols can also have a laxative effect. This is because sugar alcohols draw water into the large intestine, which can soften the stool and increase the frequency of bowel movements. This can lead to diarrhea, particularly in people who are sensitive to sugar alcohol. Additionally, the high consumption of alcohol can also lead to an increase in blood sugar levels, which can be dangerous for consumers facing problems of diabetes or other metabolic disorders. Additionally, consuming too much sugar alcohol can cause dehydration and electrolyte imbalances in the body, due to the osmotic effect it has on the body. Thus, it is very important to be aware of the potential risks associated with consuming high amounts of sugar alcohols.
Moreover, the extra amount of sugar alcohols has been implicated in a variety of chronic diseases such as cardiovascular diseases and obesity. According to the study conducted by the Harvard Health Public School, the high sugar diet may lead to a greater risk of heart disease. For instance, according to the study conducted consumers who account for 18-21 % of high calories from added sugar result in a higher risk of dying due to cardiovascular diseases. Furthermore, sugar alcohols are the type of sweeteners that are often used in processed foods and beverages. The wider application of sugar alcohols in the beverage industry has been expanding, owing to its reduced calorie level. however, the enlarged consumption of sugar alcohols which contains, Xylitol, Erythritol, sorbitol, and Maltitol may affect the upset stomach. Thus, the high amount of sugar alcohols has an adverse side effect on the human body that may certainly hinder the growth of the sugar alcohols.
The benefit of consuming sugar alcohols is that they have a lower glycemic index than regular sugar. This means that they do not cause a rapid increase in blood sugar levels, making them a good option for people with diabetes. In fact, some studies have shown that sugar alcohols may even have a positive effect on blood sugar control in people with type 2 diabetes. Additionally, sugar alcohols does not promote tooth decay like regular sugar does, which can make them a good option for dental health.
However, there are also drawbacks to consuming sugar alcohols that consumers should be aware of. One of the most common side effects of consuming large amounts of sugar alcohols is digestive issues, such as bloating, gas, and diarrhea. This is because sugar alcohols is not completely absorbed by the body and can ferment in the large intestine, causing these symptoms. Some people may also be more sensitive to certain types of sugar alcohols than others, which can make them more prone to digestive issues.
Despite these potential drawbacks, many consumers are not aware of the risks associated with consuming sugar alcohols. This lack of awareness can lead to overconsumption of sugar alcohols, which can cause digestive issues and other health problems. To address this lack of awareness, it is important for food manufacturers and health professionals to educate consumers about the benefits and drawbacks of sugar alcohols. This can include providing clear information on food labels and educational materials, as well as offering guidance on safe consumption levels. For example, the Food and Drug Administration (FDA) recommends that consumers should consume 7 - 32 grams per day depending upon the type of sugar alcohols.
In conclusion, while sugar alcohols can provide a sweet taste without adding as many calories as regular sugar, there are potential drawbacks that consumers should be aware of. These include digestive issues and other health problems associated with overconsumption. To promote healthy and responsible consumption of sugar alcohols, it is important for food manufacturers and health professionals to educate consumers about their benefits and drawbacks, and to offer guidance on safe consumption levels.
The supply chain of the sugar alcohols market comprises manufacturers, distributors, and consumers. The COVID-19 pandemic has impacted the pharmaceutical, chemical, food manufacturers, water, and other industries supply chains, as many countries were under lockdown and sealed their borders to curb the spread of the virus. Every area of the economy has experienced development since the COVID-19 outbreak, and the sugar alcohols supply chain is no exception. The pandemic crisis had an increasing influence on Global commerce and supply chains as the world economy tries to cope with it, and this is due to the rapidly declining Global investment flows. The transportation sector is experiencing instability as a result of the declining/unavailability demand for products and raw materials. Strict containment measures implemented by governments of various nations and preventative steps to reduce the outbreak's effects have resulted in a large restriction on transportation, having a ripple effect around the globe. Due to the unpredictability of the Global economy and efforts to correct the supply/demand mismatch, it is anticipated that this tendency will continue.
The pandemic has halted the entire value chain, from the acquisition of raw materials to production, packaging, and distribution, as well as the global supply chain. The outbreak has had a detrimental effect on the industry's entire supply chain. Lockdown restrictions have increased transportation trouble, resulting in the untimely delivery of raw materials required to produce the sugar alcohols and its products. The COVID-19 epidemic caused a global slowdown in industrial investment. The pharmaceutical, chemical, food and beverage manufacturers and other industries were impacted by, among other things, a shortage of workers, difficulty accessing markets, and a lack of raw materials. Additionally, COVID-19 had a significant influence on several markets, causing delays in the supply chain, manufacturing procedures, timely product delivery, and other areas. The majority of producers, however, have received some comfort from the falling occurrences of COVID-19. The Supply chain prominently consists of suppliers, manufacturers, online, and offline stores. The subsequent slowdown of pandemic cases has prompted the key market actors to take some decisive measures. The current focus of the participants is on standardizing SOPs and reforming the supply chain. The sugar alcohols sector has re-emerged in the post-pandemic age with new standards, strategies, and regulations.
The overall impact of the COVID-19 pandemic increased the raw material cost of the ingredients and production cost has surged the overall pricing of sugar alcohols. However, issues such as supply chain disruptions, logistics, and limited availability of raw materials and labor are expected to cripple the growth of the global sugar alcohols market upto some extent. Because of restrictions on the cross-border transfer of goods during a pandemic, businesses rely heavily on their suppliers of raw materials, which gives suppliers more negotiating leverage. The low availability of raw materials and limited production capacities of the manufacturers are anticipated to create a demand and supply gap, thereby resulting in increased prices of sugar alcohols for the next couple of months.
Sugar alcohols is a commodity of day-to-day life and is gaining momentum in the global market and are witnessing increasing demand amongst the growing population. Many consumers are increasingly concerned about their health and are looking for alternatives to traditional sugar. Sugar alcohols are often marketed as a healthier option because they contain fewer calories and do not raise blood sugar levels as much as regular sugar. This health-conscious mindset can influence consumers to choose products that contain sugar alcohols over those that contain regular sugar.

Tate & Lyle is a London-headquartered global speciality food and beverage ingredients and solutions company. It has changed fundamentally from the sugar refiner its name still evokes. Over 2010–2024 it sold its sugar refining business, its European and then North American bulk corn businesses (Primient), and its remaining commodity exposure. It then acquired CP Kelco from J.M. Huber in November 2024 for about US$1.8bn, which made it a leader in plant-based texturants such as pectin, gellan, xanthan and citrus fibre. The group now operates three regional segments (Americas, EMEA, Asia Pacific) and is organised around three technology platforms: sweetening (sucralose, stevia, allulose, monk fruit), mouthfeel (speciality starches, gums, pectin) and fortification (soluble fibres, prebiotics, proteins). Its value proposition is reformulation: helping food and beverage manufacturers reduce sugar, calories and fat while keeping taste and texture. FY2026 revenue was £2.0bn with adjusted EBITDA of £415m. Demand weakness has hurt recent performance, and a pending £2.7bn takeover by Ingredion now frames the investment case. --- ### What the company does Tate & Lyle formulates, manufactures and sells functional ingredients and ingredient systems to food and beverage manufacturers. Its products change a food's sweetness, texture, stability or nutritional profile. Customers include global consumer packaged goods (CPG) companies in beverages, dairy, bakery and snacks, and soups, sauces and dressings, as well as regional manufacturers and, for part of the portfolio, distributors. Following the CP Kelco integration, the company describes itself as holding leading positions in sweetening, mouthfeel and fortification. Its stated mission is to help customers meet consumer demand for healthier, more nutritious and more sustainable food and drink (FY26 Results Statement, CEO commentary). ### Company's own characterisation (paraphrased from FY2026 reporting) Since 1 April 2025, the company has run CP Kelco and legacy Tate & Lyle as one combined, solutions-focused business under a regional model. All three regional segments sell the complete portfolio. Management stresses three things: the reformulation expertise of its applications, sensory and nutrition-science teams; "solution chassis" (pre-engineered, modular ingredient systems, initially in mouthfeel); and a cross-selling opportunity created by combining Tate & Lyle's starches, sweeteners and fibres with CP Kelco's pectin and biogums (FY26 Results Statement, "Executing our strategy"). ### Business model and revenue model ### Value-chain position Tate & Lyle sits in the middle of the food value chain. Upstream are agricultural raw materials: corn, tapioca, citrus peel (for pectin and citrus fibre), seaweed (carrageenan), stevia leaf, monk fruit, sugar (as a feedstock for sucralose) and fermentation feedstocks (for gellan and xanthan). Downstream are branded food and beverage manufacturers. After the Primient sale, the company is a net buyer of some corn-derived inputs, secured under long-term supply agreements with Primient. These agreements had about 18 years remaining as of 2024 (FY24 Results Statement). ### Customer types and end-markets - **Customer types:** multinational CPG companies; regional and local food manufacturers; beverage bottlers; dairy processors; infant nutrition makers; foodservice suppliers; and distributors serving smaller customers. - **Core categories (company-defined):** beverages; dairy; soups, sauces and dressings; bakery and snacks. Infant nutrition, confectionery and some non-food uses are adjacent (CP Kelco gums also serve personal care and industrial markets). - **Geographic exposure, FY26:** Americas 49.6% of revenue (North America 39.2%, Latin America 10.4%); EMEA 31.7%; Asia Pacific 18.7% (FY26 Results Statement, Note 4). ### Independent characterisation Tate & Lyle is a mid-cap, mid-margin speciality ingredients company that only recently stopped being a commodity company. Its portfolio is strongest in texture and mouthfeel, where CP Kelco's pectin and biogums franchise has real technical barriers. It has a meaningful but structurally pressured sweetener business: sucralose faces Chinese competition and some "clean-label" customer moves away from artificial sweeteners. It also retains residual bulk sweetener and co-product exposure in Europe (£75m of FY26 revenue). The core strategic question has always been whether a sub-£2.5bn-revenue company can match the scale of the leaders: Kerry, IFF, DSM-Firmenich, Cargill, ADM and Ingredion. The board's decision to recommend the Ingredion offer in June 2026, after two years of disappointing organic growth, effectively answers that question in favour of consolidation.
